Without a doubt, the ideal complement to the tamales. This delicious beverage, usually sweet, also comes from ancient times. Besides, the atole, or some of their variants as the pozol, one of the most popular ones, has been an all-time favorite because is an exceptional energy source. The atole has a very good reputation. Some chronicles say that this corn based beverage was liked by emperors like Montezuma himself, who used to add honey to sweeten it. Just like with the tamales, the culture mix with the europeans produced a rich variety of atoles, with fruits, species and grains. The atole is so relevant in Mexican gastronomy, that in Tarecuato Michoacan a yearly festival is destined to show and sell the most original, diverse and delicious varieties of this wonderful beverage.
